RETORT SUPERVISORS’ COURSE

Course Structure

 

The normal program of the course includes.

 

Module 1: Introduction to canning

Module 2: Retort systems and container handling

Module 3: Packaging systems for thermally processed foods

Module 4: Microbiology of canned foods

Module 5: Principles of thermal processing

Module 6: Retort operation and production records

Tutorial/practical session, covering theory and practical aspects including principles of thermal processing, seam inspection and retort operation.

Module 7: Water chlorination and canning sanitation

Module 8: Regulations relevant to thermal processing

Examinations - A written examination covering the contents of the course, and practical examinations on retort operation and seam evaluation.
