Broad International Food Technology Experience

Andrew Allsebrook joined Foodstream in 2012 as a Senior Food Technologist, following a family move from the UK.  In Andrew’s role as Senior Food Technologist at Food Innovation @ Abertay (in Scotland), he coordinated a number of food related projects with a wide range of companies, from new product development for a distillery, food safety management implementation for a family run confectionery producer to a number of sensory analysis projects for a large bakery ingredient company.

Andrew has also worked in Quality Assurance, new product development and process improvement roles for large companies, gaining experience in short shelf life desserts, soft drinks and confectionery.  These roles involved working with all areas and levels within the food production and supply chain, negotiating with clients and customers, satisfying the requirements of internal customers and developing strategies with ingredient suppliers to improve the quality and performance of the final product.

This broad experience has led to an expertise in food safety management, auditing to BRC standards, implementing and maintaining HACCP and supporting food safety and quality systems.  With a chemistry background, Andrew also has an interest in ingredients and their interactions within food.

Andrew gains great satisfaction from seeing a quality food safe product that he has been involved in the production of being purchased off the shelves.

EMPLOYMENT DETAILS

April 2007 – August 2011: Food Technologist, food innovation @ abertay, University of Abertay Dundee (UAD), Scotland

Responsible for progress and co-ordination of all food innovation @ abertay (FIA) projects with Scottish Food and Drink companies to provide innovative solutions to food and drink challenges. FIA, based at the University of Abertay, provides practical technical solutions for Scottish food and drink companies.

  • Responsible for day-to-day technical supervision and management of FIA projects
  • Initiated, recruited and managed FIA consumer panel, enabling FIA to develop sensory analysis as a key skill and offering to clients.  A number of different sensory tools were used on the foods such as bakery and meat products.  In addition, I incorporated sensory testing and analysis into a frozen food company’s quality system.
  • Provided food safety management and quality systems advice to a company to support their application for accreditation enabling them to supply the UK’s major retailers.
  • Involved in recruiting new clients, promoting FIA business and developing projects to enhance clients’ business
  • Point of contact for several external groups, including Scotland Food & Drink and developed excellent working relationships with key Trade Organisations within Scottish Food and Drink industry.  Represented the School and FIA at a variety of national food and drink events and seminars.
  • Successful submission of several proposals, both to funding bodies and to companies
  • Supervision of third year students on placement within FIA, monitoring work undertaken with outside companies and providing advice and mentoring to develop their confidence and food industry knowledge.

April 2007 – August 2011: Lecturer, University of Abertay Dundee, Dundee, Scotland

Lecturing in Food Science and Food Safety to under- and post-graduate Food students

  • Module tutor for  Introduction to Food Science, Food Safety Management,  and Food Hygiene and Safety modules
  • Developed material and learning theory for two new modules, Food Processing Technology and Food Hygiene and Quality Systems
  • Supervision of fourth year undergraduate and Masters students, advising on research techniques and academic reporting skills.
  • Delivered family aimed public lecture, ‘You Can Play With Your Food’, as part of Dundee Science Festival.

April 2006 – February 2007 – RAW MATERIALS QUALITY AUDITOR, Kensey Foods, Launceston, Cornwall

Kensey Foods produce chilled desserts for own label branding and under licence for leading UK brands.  Responsible for quality of all raw materials coming on site, working with suppliers and the factory to improve the quality of their products for use within the business.

  • In short period in the role developed systems and procedures to dramatically improve performance of this role.  This included enhanced traceability, improving the ingredient testing efficiency and increasing the quality of report writing and record keeping.
  • Developed excellent working relationships with key ingredient supplier, ensuring the integration of new ingredients and maintenance of the quality of existing ingredients.

July 2002 – January 2006 – INTERMEDIATES COORDINATOR & SCALE UP CHEMIST, Tripos Discovery Research, Bude, Cornwall

Tripos, a pharmaceutical research company, was involved at the initial stages of Drug Discovery. Managing a small team, the responsibility of this role was the coordination of timely throughput of compounds within the company.

  • Developed, implemented and managed systems for the planning and day-to-day coordination of compound synthesis, enabling key stages of a large project to be ahead of schedule through its duration.  This included ensuring the purity and traceability of the compounds and supporting data and introducing procedures and systems to improve efficiency.
  • Strong project management skills, in addition to planning, negotiation and technical knowledge enabled success in this role, contributing to the completion of each milestone ahead of schedule.

October 2000 – May 2002 – MATURE GRADUATE SCHEME, Britvic Soft Drinks, UK

Joined the Company, the number two producer of soft drinks in the UK, on their Mature Graduate Scheme in October 2000 and successfully completed three 6 month placements with exposure throughout the Supply Chain. The roles were:

  • New Product Development, including the development of a completely new energy product, a line extension of a cordial and the re-formulation of an existing product;
  • Quality support role in a PET bottling plant;
  • Production Supervisor in a large canning and PET carbonated drinks plant.

1998- 2000 – Q.A. Team Leader, Wrigley Company Ltd., Plymouth, UK

The function involved responsibility for all areas of quality and food safety in the manufacturing area of gum production. Co-ordinated all product development for the Manufacturing area, taking products from small-scale trials to launch.

  • Co-ordinated production launches of Airwaves, Hubba Bubba, Orbit and Extra line extensions, including the incorporation of new ingredients into procedure.
    • Through working closely with purchasing, suppliers and production, introduced new suppliers for existing and new ingredients, improving quality, competition and costs.

October 1990 – December 1997 University of St Andrews, St. Andrews, Scotland

 PhD in Bio-organic Chemistry – “QPRTase – Quinolinic Acid Analogue Synthesis and Non-enzymic Decarboxylation of N-alkylquinolinic acids”

First Class Honours Degree in Chemistry

  • Successful six-month New Product Development placement with Procter and Gamble and listed as one of the main inventors on a Patent Publication number WO9510796.
